RED EYE BARBECUE
Central Texas barbecue through the lens of Bob Costarella.
GRAND OPENING SATURDAY SEPTEMBER 19TH
3215 Coffey Lane, Santa Rosa, CA, 95403
It all started with a smoker and a dedication to the craft.
Red Eye Barbecue started with a smoker, a passion for central Texas-style barbecue, and a whole lot of early mornings and late nights. What began as a pop-up brought us to kitchens, events, and backyards throughout Sonoma County.
Now, we've got a place of our own.
We're bringing the same dedication to slow-smoked barbecue to our permanent home in Sonoma County — serving up brisket, ribs, sausage, and all the fixins' the way we believe they oughta be.
From apprentice to Executive Chef/Owner.
For generations, the knowledge behind great Texas barbecue has been passed from pitmaster to apprentice — not just recipes and techniques, but an understanding of fire, smoke, meat, and patience that can only be learned over time. Bob Costarella entered that tradition when he spent a year apprenticing under renowned pitmaster Lance Kirkpatrick at Stiles Switch BBQ.
Kirkpatrick himself studied under the legendary Bobby Mueller, the James Beard Award-winning pitmaster behind Louie Mueller Barbecue, a restaurant often revered as the “Cathedral of Smoke.” Through that lineage, Costarella became part of a barbecue tradition rooted in generations of Texas pitmasters.
COME GET SOME.

The food here is amazing! If you're a transplant and have been looking for outstanding BBQ like you tasted in central Texas, look no farther. The ribs and cheeks have the great tell-tale smoke ring and are tender and juicy. The potato salad and cole slaw are fabulous. Every bite was delicious. I will be back frequently to get my TRUE BBQ fix. Also, the owner and sous chef are great conversationalists!

Red Eye Barbecue pops up every Saturday at Sazón, and it's well worth a visit. Pre-order or swing by early for the best selection--this is BBQ people line up for.
The pork ribs are tender and smoky, the beef cheek is rich and melt-in-your-mouth, and the jalapeño cheddar sausage is packed with flavor (not spicy). Sides like the potato salad and tangy slaw complement everything perfectly.
We were lucky enough to try the frozen custard as a special treat--and it was excellent.
Quality food, relaxed vibe--definitely a spot to keep on your radar.
SO GOOD.
Say hi to Bobby and Brendan--the sweetest! -

I drove over an hour to experience this amazingness after seeing months of online pictures. I didnt really know what to expect, I love bbq but I never had anything like this before! Barbeque wise- top notch perfection, on that aspect you can tell this guy knows what he is doing with SO much attention to detail. To take it a step further, each item was specifically tailored with additions of sauces that complemented the meats so perfectly, only a professional could do this!! I experienced probably all of the sides, the potato salad is out of this world!! NOTHING like anything i have experienced and potato salad is one of my go tos! Highly recommended spot to try and well worth the price..not cheap..but here i am two weeks later fantasizing! the beef cheeks...omg!!

"Barbecue" means a lot of things to different people. There's Memphis, Carolina, Kansas City--the list goes on.Red Eye is unabashedly Texas BBQ. And frankly, it might be some of the best you can get outside the state of Texas. It's delicious and well-executed. I'm amazed that I no longer need to visit family in Houston to get BBQ like this! I didn't think it'd be possible.

We got takeout food from Red Eye Barbecue for the first time today. Beef rib, pork ribs, pork belly wheel and sides of lentils, potato salad and cole slaw (along with the pickled veges and fruit). Wow! Everything was delicious. All three meats were super tasty, smokey but not overpoweringly so, and fall off the bone tender. The sides were surprising stars. At some bbq places sides are an afterthought. Not here. The best barbeque I have had in Sonoma County. And Bob, the owner, is very friendly and approachable.

Hands down the best Texas BBQ I've ever had -- right here in Northern California! Bob is an amazing guy, and his passion shows in every bite. The beef cheeks are phenomenal. They're only open on Saturdays and sell out every week, so make sure you pre-order on their website -- you won't want to miss it!
